These little cookie bites have been a staple sweet treat in our family! I first made these when my son Ryan was two and we kept them in the fridge for a cold afternoon treat. I remember vividly us munching on these when it was scorching outside. At the time we had no AC and found refuge in homemade popsicles and these cold cookie bites. I can still hear his laugh and see his smile. We are remaking them today and sharing it here with you. And if you’ve been around since the very very beginning then you may remember this recipe! Anyways, these are beyond simple to make and a fun way to have your little ones get involved in the kitchen. The best part? You can customize the add ins to fit your family’s tastebuds. Get creative and let us know how you made these your own!

Cookie Bites - A Quick Sweet Treat

What You Need; 1/2 cup cookie butter (or biscoff spread), 2 tablespoons softened unsalted butter, 1/4 cup brown sugar, 1/2 cup oats, 1/4 teaspoon sea salt, 2-3 tablespoons rainbow sprinkles, 1/4 cup white chocolate chips + 1/2 cup extra to melt for the drizzle.

What You Do

-In a bowl use a spoon or spatula to mix the cookie butter, unsalted butter, and brown sugar. Mix until smooth and the sugar have dissolved into the butters.

-Next add in the oats, sprinkles, and white chocolate chips. Sprinkle in your sea salt and begin scooping out each ball using a tablespoon measure or mini cookie dough scoop.

-Scoop each bite onto parchment paper and then use your hands to make into neat balls.

-Move your cookie bites into the refrigerator and let them chill for at least an hour.

-In a microwave safe bowl, melt your remaining white chocolate at 30 second intervals stirring in between each time until smooth. Use a piping bag or plastic zip top bag to drizzle white chocolate onto each cookie bite.

-We like to store ours in the refrigerator so they keep their shape and texture! Store in the refrigerator for up to 4 days.
